Sugar has become the global villain. It gets blamed for everything. I meet parents who do not let their kids touch anything sweet, even fruit, till they are a few years old. I feel bad for these children. If they cannot enjoy a bit of sweetness when they are young, then when will they? Not in their teens when they start worrying about weight. Not later, when health issues come into the picture. I am not promoting sugar or careless eating. A small and sensible amount of sugar for someone who is not diabetic feels like one of the few simple comforts that keep us sane in the world we have built.

I like to have a tiny piece of chocolate after any one of the meals in the day. Today, I picked up the Amul Bitter 90 percent intense dark chocolate. They proudly say they use the best Indian cocoa. I took one bite and stopped. It was extremely bitter. I enjoy bitter gourd, but this was on another level. The bar does have sugar, but in such a small amount that it does not register. It also reminded me that what we usually call chocolate flavour is mostly sugar wearing a cocoa perfume.

Now I am looking at the rest of the bar. I need a plan before my wife discovers that I wasted an entire bar in the name of science. If you have ideas, please share.
